- 800 g beef for roast beef, approximately 200 g per person
- 2 garlic cloves
- 2 sprigs of fresh rosemary
- Extra virgin olive oil, as needed
- Salt, to taste
- Freshly ground black pepper, to taste
For the alternative seasoning:
- 4 tablespoons extra virgin olive oil
- 1 level teaspoon smoked paprika
- ½ teaspoon garlic powder
To prepare it, you can use several cuts of beef that are suitable for roasting, such as sirloin, striploin, rump, knuckle, topside, silverside, or eye of round. If you are unsure which cut to choose, ask your butcher for advice and have them prepare a piece that is already tied and ready for roast beef.
Make sure the meat is at room temperature before cooking. Leave it out of the refrigerator for at least 30 minutes beforehand. This step helps ensure a more even cook.
Meanwhile, prepare the marinade. Finely chop the garlic and rosemary leaves, then place them in a bowl with a generous drizzle of extra virgin olive oil, salt, and freshly ground black pepper. Mix well until you obtain a fragrant and evenly combined mixture.
Massage the marinade into the meat, making sure it is evenly distributed over the entire surface. Let it rest for a few minutes so that the flavours can begin to penetrate the beef.
Heat a frying pan over medium-high heat with a drizzle of extra virgin olive oil. Once hot, sear the roast beef on all sides for 2–3 minutes until a golden, flavourful crust forms.
Transfer the meat to a roasting tray, pour over any juices left in the pan, and cook in a preheated oven at 200°C (392°F) for approximately 20–25 minutes for a pink, medium-rare finish. Adjust the cooking time according to your preferred level of doneness.
Once cooked, remove the roast beef from the oven and let it rest for 5–10 minutes before slicing. This is an important step, as it allows the juices to redistribute throughout the meat, resulting in more tender and succulent slices.
Slice thinly and serve with a drizzle of extra virgin olive oil and your favourite side dish, such as roasted potatoes, grilled vegetables, or a fresh salad.
Alternative seasoning for a spicy twist
If you would like to add a bolder flavour to the dish, you can prepare a quick sauce by mixing extra virgin olive oil, smoked paprika, and garlic powder.
Stir until smooth, then drizzle over the sliced meat or serve on the side. It will give the roast beef an original, aromatic, and even more flavourful touch.
