Spaghetti with Anchovies and Cherry Tomatoes

  • 320 g spaghetti
  • 200 g cherry tomatoes
  • 4 anchovies, finely chopped
  • 4 garlic cloves, with skins on
  • 4 tablespoons olive oil
  • Fresh parsley, finely chopped to taste
  • Salt to taste

Start by washing the cherry tomatoes thoroughly. Do not cut them, as they will be cooked whole in the pan. Finely chop the anchovies and fresh parsley.

Take a large pan and pour in some extra virgin olive oil. Add the garlic cloves with their skins on (in camicia) and remove them before the end of cooking. This will infuse the dish with flavor while making it easier to digest. Sauté the garlic over medium heat until golden and fragrant. This allows the oil to absorb the garlic's aroma.

Meanwhile, bring a large pot of salted water to a boil and cook the spaghetti according to the package instructions, leaving them slightly al dente.

Add the whole cherry tomatoes to the pan. Cook them over medium-high heat, stirring occasionally, until they start releasing their juices and soften slightly. This will take about 5-7 minutes. Add the chopped anchovies and fresh parsley to the pan with the tomatoes. Add some pasta cooking water. Continue cooking, stirring well, until the anchovies are well combined with the tomatoes.

Reserve some pasta water for later. Once the spaghetti is cooked, drain them (keeping some cooking water) and transfer them immediately into the pan with the cherry tomato and anchovy sauce. Add a ladle of pasta water to help bind all the ingredients and create a creamy sauce. Toss the spaghetti vigorously in the pan for a couple of minutes until they are well coated and mixed with the sauce. Keep tossing until the spaghetti are well covered, and the sauce reaches the desired consistency.

Remove the garlic cloves from the pan and serve the spaghetti immediately, garnished with an extra sprinkle of chopped fresh parsley, if desired.
