  • 400 g of squid (fresh or frozen)
  • 400 g of tomato sauce
  • 2 tablespoons of chopped parsley
  • 2 tablespoons of capers
  • 1 medium onion, finely chopped
  • 2 cloves of garlic, crushed
  • 1/2  fresh or dried chili pepper, chopped (optional)
  • Salt to taste
  • Paprika to taste
  • Extra virgin olive oil

These spaghetti with tomato sauce and  rings and tufts of squid are a delightful and flavorful dish, perfect for a family dinner or to surprise friends with a homemade delicacy. The combination of al dente spaghetti, enriched with a thick and aromatic tomato sauce, complemented by squid rings and tufts, creates a harmony of flavors that captivates the palate.

Before starting the preparation, it's essential to clean the squid. If opting for fresh squid, ensure they are thoroughly cleaned, removing the outer skin and innards, then slice them into thin rings, also retaining the tufts (tentacles) for an interesting texture. If using frozen squid, follow the instructions on the package.

In a large pot, sauté finely chopped onion and crushed garlic cloves in some olive oil until golden and fragrant. Then add the squid and cook until tender and lightly colored, approximately 4-5 minutes. It's crucial not to overcook them to prevent them from becoming rubbery and losing their texture.

Once the squid is ready, add the tomato sauce and season with chopped fresh parsley, capers, chili flakes (if desired for a hint of spice), and a pinch of salt and paprika for color and flavor. Allow the sauce to simmer over medium-low heat until it slightly thickens and the flavors meld harmoniously.

Meanwhile, cook the spaghetti in plenty of salted water until al dente, following the instructions on the package. Once cooked, drain and transfer them directly to the pot with the tomato and squid sauce. Toss the spaghetti well with the sauce to ensure they absorb all the flavors.

Before serving, remember to adjust the seasoning with salt and pepper according to your personal preference.
